Peach Mossto Co-Fermented is a bold and fruit-forward coffee from Circasia, Quindío, Colombia.
Ripe peach sweetness leads the cup, layered with bright passionfruit acidity and a rich apricot jam finish.
Vibrant and expressive, this coffee showcases the playful side of experimental fermentation while maintaining clarity and balance.

Brew Guide

This lot reflects the experimental vision of Edwin Noreña at Campo Hermoso, a farm known for pushing the boundaries of fermentation techniques.

Hand-harvested Caturra cherries, picked at over 20° Brix, are first soaked and carefully sorted before undergoing anaerobic fermentation at 18–20°C.
After 48 hours, fresh peach juice (mossto) is introduced, and fermentation continues for an additional 72 hours with inoculated yeast and glucose.

The coffee is then dried in a greenhouse for 18 days, followed by a final conditioning stage using dried pulp to stabilise and refine the cup profile.
The result is a fruit-saturated yet clean cup, balancing tropical acidity with layered stone fruit sweetness.
