Alo Village 74158 is one of the most meticulously crafted naturals we carry. From Bensa, Sidama, at an altitude of 2,400–2,550 MASL, this Ethiopian lot is defined by its extraordinary precision; in the picking, the fermentation, the drying, and the resting. The result is a cup of vivid complexity: passionfruit and strawberry layered with red grape sweetness and a hauntingly delicate lavender floral finish.
Ripe cherries are meticulously handpicked in Alo Village, Bensa, before being sealed in blue plastic tanks for 120 hours of cold anaerobic fermentation. The reduced temperature slows microbial activity, allowing delicate aromatics and complexity to develop with greater clarity and control.
After fermentation, the cherries are dried on African raised beds for 25 days; turned hourly and shaded during peak sunlight hours to protect the fruit's integrity. Once moisture content reaches 11–11.5%, the coffee is sealed in GrainPro bags and rested for a minimum of 45 days before dry milling, allowing the flavour profile to fully settle and integrate.
