Lalesa is a deep and richly layered Ethiopian anaerobic natural from the high-altitude villages of Gedeb, sourced from 115 smallholder growers farming above 2,200 MASL. Stewed berries and red liquorice build through the cup with a bold, immersive intensity, grounded by a dark chocolate base that lingers long after the last sip. Complex, indulgent, and full of character — this is a coffee that makes itself known.
This lot is produced by 115 smallholder growers across the villages of Hurea, Haloberiti, and Udeyi in the Gedeb district, all farming small plots alongside food crops at elevations exceeding 2,200 MASL. Cherries are selectively harvested at peak ripeness, accepted only above 18 brix and floated to remove defects before processing begins.
The whole cherries are sealed into plastic tanks and left to ferment anaerobically for 110 hours — one of the longer fermentation windows in this range. From there, they move to shaded raised beds for a slow natural drying of around 25 days. It is this combination of extended anaerobic ferment and unhurried drying that drives the cup's depth: floral at the top, then dark and layered all the way through.
