Café Granja La Esperanza — Geisha Honey comes from Cerro Azul, the Herrera family's most storied estate and the birthplace of Colombian Geisha. Named for the blue-white haze that settles over its peak, this high Andean farm grows nothing but Geisha across 15 hectares where a warm Pacific breeze meets cool valley mist. Jasmine lifts the cup with a signature floral elegance, giving way to the gentle warmth of maple honey and a smooth, creamy white chocolate finish. Delicate, sweet, and precisely composed — this is Geisha in its most refined expression.

Brew Guide

This lot comes from Café Granja La Esperanza (CGLE), a third-generation family operation led by brothers Rigoberto and Luis Eduardo Herrera across five estates in the Colombian Andes. After two years studying the Geisha variety in Boquete, Panama, the family planted their first seeds at Cerro Azul in Trujillo in 2010 — making it the birthplace of Colombian Geisha, and one of the most significant farms in the country's specialty coffee history.

The honey processing here is carefully sequenced. Cherries are dry fermented whole for 24 hours, then pulped and fermented in mucilage for a further 36 hours in sealed tanks, before being mechanically dried with the mucilage still on the bean. This layered approach preserves the Geisha's delicate floral character while building a deeper honeyed sweetness and a soft, creamy finish that sets this lot apart from a conventional honey process.
