Tatama is a rich and fruit-forward Colombian natural from Guatica, Risaralda — a region UNESCO recognised as a Coffee Cultural Landscape in 2011, nestled around the Tatama National Park. Cocoa and chocolate anchor the cup, while bright pineapple and blueberry lift through with a vivid, juicy intensity. Dense, creamy, and deeply expressive — this is natural processing done with genuine precision.
This lot is produced by Hernando Tapasco in Guatica, Risaralda — one of Colombia's better-known processing and cupping specialists, recognised as much for his work training and supporting local farmers as for his own exceptional coffees. Natural processing remains relatively young in Colombia, where the humid climate has historically made drying difficult, but Tapasco has quietly built one of the country's strongest reputations for it.
After handpicking, cherries ferment in small 33kg containers for up to 120 hours, with temperatures held below 20°C to encourage a slow, controlled anaerobic ferment. No external agents are added — the process is driven entirely by the native lactic bacteria and yeasts present on the fruit itself. The result is a cup that is at once clean and complex, with a dense, creamy body that carries through from the first sip to the last.
