Danche Red Honey is a rare and quietly compelling Ethiopian coffee from the Gedeb district of the Gedeo Zone. Honey processing is genuinely uncommon in Ethiopia, making this lot something of a find. Soft peach and sweet dates carry the cup with a gentle warmth, closing with a clean, composed black tea finish. Floral, full-bodied, and unhurried — this is a coffee that rewards patience.

Brew Guide

This lot is produced by smallholder farmers surrounding the Danche Washing Station in Gedeb, a region that shares its fertile soils and cool highland climate with the neighbouring Yirgacheffe zone. Farmers handpick only ripe cherries, which are then sorted by sugar content using a refractometer and floated to remove defects — a level of selectivity that sets the foundation for the cup's consistency.

After a 48-hour ferment, cherries are only partially de-pulped, leaving most of the mucilage intact on the bean. This retained mucilage is what distinguishes red honey processing — drying with the sugars and fruit still present, contributing directly to the coffee's fuller body and natural sweetness. The coffee then moves to raised African beds, turned frequently over 14 to 18 days until moisture stabilises at 11.5%.
