[Vibrant] Yirgacheffe Danche - Ethiopia - Anaerobic Washed 200g

This lot is produced by smallholder farmers surrounding the Danche Washing Station in the Gedeb district of the Gedeo Zone — a region that sits just south of Yirgacheffe and shares its reputation for producing some of Ethiopia's most complex and expressive coffees. Farmers here tend plots smaller than two hectares, intercropping coffee alongside food crops in a semi-forest environment of fertile red soil at over 2,100 MASL. Most work organically by default, often measuring their farms by the number of trees rather than by area.

Only the ripest cherries are accepted, selected by sugar content above 20 brix and floated to remove defects. After pulping, the coffee undergoes an anaerobic fermentation of 84 to 96 hours before being double washed and transferred to shaded raised beds, where it dries slowly over 13 to 15 days. The result is a cup that is clean, layered, and unmistakably refined.
